Grilled steaks are one of the things I look most forward to when grilling season arrives, but for many people (formerly myself included!) grilling steaks (especially grilling filet mignon) can be intimidating. Getting them to the perfect temperature, getting a great sear and getting the perfect flavor can be just a few elements that leave steak-lovers hesitant to fire up the grill. Especially when spending money on a nice quality cut like a filet, it can be nerve-wracking to try cooking methods that you haven't hammered down to foolproof.

Grilled filet mignon is a grilling season staple in our house. Of course because it is so tender and delicious and also because it is so lean and packed with protein to fuel all of our summer-time activities (a.k.a. helps energize our post-hibernation bodies haha!)

How to Grill Filet Mignon to Perfection!

Since Memorial Day feels like the unofficial kick off to grilling season, now is the perfect time to get grilling and master that grilled steak. If you've been wanting to know how to grill filet mignon to perfection, you're about to  find out (printable recipe below!)

How to Grill Filet Mignon to Perfection

It really all starts with the quality of the meat. A great piece of meat doesn't need a lot of fuss, I just season with some Worcestershire Sauce and a combo of cracked salt and pepper, dehydrated garlic and dried rosemary. It's also key to let steakrestoutside of the refrigerator for about 20 – 30 minutes before grilling so that it doesn't toughen up on the hot grill.

Getting those beautiful grill marks isn't just for appearances, that means you've achieved a great sear that will keep those delicious juices put until you're ready to enjoy your filet!

Tips for grilling filet mignon!

How long to grill filet mignon is based on a number of factors such as the type of grill you use, the thickness of the steak and how you want it cooked so a grill thermometer is going to be your best friend.

How to Grill Filet Mignon to Perfection

  • 1 1/2 " thick 8 oz. Filet Mignon steaks whatever quantity necessary for your party size
  • Worcestershire sauce
  • Kosher salt and fresh cracked pepper
  • Dehydrated garlic
  • Dried rosemary
  • Remove filet mignon from the refrigerator and pat dry. Trim away any connective tissue around the edges of the meat.

  • Drizzle both sides of filet with Worcestershire sauce and liberally season with salt, pepper, dehydrated garlic and dried rosemary. Allow to rest for about 30 minutes.

  • Turn burners for one half side of a gas grill to high and leave the other side of the grill burners off.

  • Once the internal grill temperature has reached about 450 degrees F, place the steaks on the hot, direct heat side of the gas grill. Grill for 3 minutes then rotate 1/4 turn (to get those pretty hatch grill marks). Grill for another 3 minutes then flip. Grill for another 5 minutes on the other side and then move to indirect heat.

  • Cook filets over indirect heat until they have reached about 5 degrees below the desired cooking temperature (they will continue to cook slightly even once removed from the grill).

  • Remove filets from the grill and tent lightly in tin foil for about 5- 8 minutes. As mouthwatering as they will look and smell, resist the urge to cut right in as those juices you worked for will spill right out.

Steak Temperature Chart (remove once grilling thermometer reaches about 5 degrees below your desired temperature)
Medium Rare: 145º F
Medium: 160º F
Well Done: 170º F
